Fried Chicken Duo

Fried chicken has always been my favorite food as a kid. I remember agreeing to eat it everyday
which of course would bring protests from my parents saying that I should eat veggies and stuff.
Well of course, they are right. But then, what kid would not want to have fried chicken everyday
               right?

So for today's post, I am hoping  to re-live my childhood days again and savor
that good old crisp of fried chicken. This is a kind of twist because half the chicken were stir fried
in sweet and spicy sauce which would make it like an adult fried chicken.

Fried Chicken Duo ( inspired by Aeri's Kitchen )

3 cuts of chicken thigh and drum sticks
          (further chopped in smaller pieces)

          1 tbsp minced garlic

          breading mixture
          1/4 cup flour
          1/4 cup cornstarch
          1/4 cup seasoned chicken breading

Sauce ( You can adjust taste to your preference)
         3 tbsp chili paste
         1 tbsp soy sauce
2 tbsp corn syrup or maple syrup
         3 teaspoons sugar
         1/4 cup vegetable oil
         1 teaspoon sesame oil
         2 tbsp minced garlic

         2 tsp sesame seeds

      * Rub chicken with salt, pepper and minced garlic let it sit in a bowl for a 10 minutes.
      * Dredge chicken pieces in the breading mixture, coat them evenly.
      * Deep fry them for 8- 10 minutes for the first frying.  Drain and set aside until all chicken
         have been fried.
      * Do a second deep fry for about 5-7 minutes each. WATCH chicken because cooking time varies.

For half the amount of chicken, prepare the sauce:
Combine sauce ingredients in a bowl and pour onto heated pan. Stir until bubbles appear on surface.
Add half of the chicken and coat them by tossing them in the pan. Let cook for a minute. Turn off heat
      Sprinkle sesame seed on them.

The other half of chicken is served plain.
