Last weekend, I got a grill pan from Ikea which was on sale. It is always fun to visit Ikea because aside from the very affordable and hearty breakfast in their restaurant, you get to see lots of kitchen and home stuff too, on sale! So the grill pan was one of the things that caught my eye, aside from the 4 pack of hangers which was 0.99 cents. 🙂
So for this week’s recipe, my grill pan takes center stage.
I grilled orange and yellow bell peppers,and asparagus , then put avocado and fried eggs together with them in a plate. It is that simple. Alternately, if you don’t have a grill pan and if you are lazy to fire up the outdoor grill like me, you can stir fry the veggies instead of grilling them.
With this dish , I was generous of seasoning the egg with salt as I fried them because I think the dish needs that kick of saltiness to compliment the sweet and tangy taste of the bell peppers. And lastly , the vinegar and honey glaze should not be skipped because it finishes the dish off very nicely.
So the dish in summary is : the sweetness and tang from the bell peppers, the crisp and nutty taste of asparagus, savory and salty fried egg , that creamy, creamy avocado and the citrus-y sweet honey vinegar glaze. The flavor is as mouthful as the title, I guess!
Grilled Bell Peppers and Asparagus with Fried Egg and Avocado

8 stalks of asparagus, hard tips removed
one large yellow bell pepper, sliced into strips
one large orange bell pepper,sliced into strips
1 ripe avocado, sliced
salt and pepper
one tbsp honey
one tbsp vinegar
1. Heat the grill pan on the stove with high heat until very hot and steam is visible. Place the peppers in the grill pan, positioning them vertically against the lines of the pan. Place the asparagus in the same manner. Reduce the heat of stove to medium.
2. Mean while, Heat cooking oil a frying pan and fry the eggs, sunny side up. Set aside.
3. When the peppers are marked with dark lines , turn them over. Lightly flip the asparagus. Cook vegetables for two more minutes, or until soft.
4.Arrange veggies and fried eggs in a plate. Slice the avocado and add to the side.
5. Combine honey and vinegar in a little saucer and drizzle over the veggies, eggs and avocados.
