My favorite dish last week was my weekender, “Pancit Sardinas”. Being a Friday, I was lazy to cook anything elaborate. I wanted to use the fishballs We have in the freezer plus anything that I could serve with it that is already in our pantry. And nothing else could have been perfect aside from the very simple and economical Pancit Sardinas.
4 package of instant pancit bihon-you can ,ofcourse, use the real thing.Im just happy that I was able to get rid of these instant noodles that our local asian market gives away for every $50 purchase.No one eats them and they have been in our pantry for months now.
2 medium tomatoes(chopped in small cubes)
Olive oil (2 teaspoons)
One medium onion (chopped)
6 cloves garlic ( minced)
2 cans of sardines, whether hot or regular is your choice.
Salt and pepper to taste
One bowl fishballs, fried separately
Saute garlic and onion, once translucent, add in tomatoes.
When tomatoes are cooked,add 2 cans of sardines and simmer for about two minutes.
If the instant noodles you are using has dried seasoned vegetables, you can add that too. I discarded the powder seasoning that came with them.
Add in the noodles, stir it in until all sauce is absorbed and has coated the noodles,achieving “pancit consistency”.
Add salt and pepper according to your preference.
Transfer to serving dish and top with fishballs.
