Today, I was supposed to make something else..
Today, I drooled over a lovely photo of a cappuccino mousse dessert and immediately fantasized eating it with a cupcake.
But guess what? Maybe today is not a very lucky day for me -the cappuccino mousse did not happen. Instead, today is yet another day of having something to add to my kitchen fail stories. Today is a day of gritty and ugly looking cappuccino mousse that went straight to the garbage.
I wont tell you much about that story, though.
The day was saved anyways. I just cant end the day with me being disheartened like that. So I baked something that made me smile.I have learned by experience that when a recipe is too complicated for a novice baker like me (and the cappuccino mousse does not even require baking!), save the day by trying something less complicated.
So these muffins were born.
With the ease of preparation and how handy the ingredients are, this is surely going to be my
“go-to” recipe when I want an easy treat done in a short time. They bake for 15 minutes or so, a plus point for a hot and humid day like this.
It is so hot that turning the oven on for an hour may turn our kitchen to a bikram yoga room.
These seem like the last hottest days of summer before fall sets in.
And yes, It is fall pretty soon!
I am thinking about pumpkin pie, baked macaroni and… cappuccino mousse.
But these last days of summer, they make me feel like I am back in the Philippines. And for a moment,
I silently wish I really am. I imagine baking batch after batch of chocolate cookies and lots of these peanut butter and banana muffins for all the kids. That would be lovely.
But for now though, I am enjoying munching these goodies warm and fresh outta the oven.
