It does not really take much to make me happy.
Hotdogs for breakfast would be enough to for me to say I am having a good day.
An extra 30 minutes of sleep is, to me, a bliss.
An uninterrupted time when I clean the house is a treat especially now that I have a baby to attend to,
And no minor thing can put me down as long as my house is currently clean and clutter free.
Little things like my husband charging my phone in his own initiative and my
baby’s little shy smile every time she wakes up in the morning give me pure joy.
Sometimes, the little things are the best things. I believe that the little conversations with
my husband every night make up for a lifetime of understanding and connection.
The little decisions we do everyday is a compilation of a big success in the end.
Peanut Butter Chocolate Chips Mini Muffins
yields 24-30 mini muffins
1 and 3/4 cup all purpose flour
2 and 1/2 tsp baking powder
1/4 teaspoon salt
1/2 cup brown sugar
1/2 cup chunky peanut butter unsweetened
1/4 cup vegetable oil
3/4 cup milk
2 tsp vanilla
2 cups chocolate chips
Preheat Oven to 350 F. Line mini muffin pans with small cupcake liners.
Combine and gently mix flour, baking powder, salt and sugar in a bowl.
Whisk egg in a bowl and mix together milk,vanilla,oil and peanut butter.
Mix the liquid to the dry ingredients and combine the ingredients using a spatula. Do Not over mix Slight lumps are okay.
Fold in chocolate chips into the batter.
Spoon to paper liners to about 3/4 of its content.
Bake for 7-11 minutes. A tooth pick inserted at the middle should come out clean.
Taking little steps at a time is the best way to face life.
