Popovers are light and airy rolls that are versatile for serving as a sweet entree or as a side to savory dishes.

Ingredients

  • 1 cup all purpose flour
  • 1 cup milk
  • 3 large eggs
  • 2 tbsp melted butter plus more for greasing the muffin pans
  • 1/2 tsp salt

Instructions

  1. Place your oven rack on the lowest position. Pre-heat oven to 425 F. Grease ten large muffin cups with melted butter. Place them on a large baking sheet(s). Position them with about 2 inches or more space in between to allow room for the popovers to expand.

  2. Add all the ingredients in  a large bowl and using a hand held beater, beat the mixture until smooth. Pour about 1/4 cup of batter onto the cups. Divide remaining batter into the cups until all batter is used up. If you are using a regular muffin pan, you have to leave one slot in between that is unfilled so to give room for the expansion of the popovers.

  3. Bake for 15 minutes without opening the oven door.  The popovers should be all puffed up, crisp and golden brown. Lower temperature to 350 F and bake for 10-15 more minutes. 

  4. Popovers can be served with butter, honey or maple syrup and whipping cream, together with some fruits. They are also great sides to savory dishes like steak and stew.
