Ingredients

  • 1 cup all- purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup sugar
  • 1/2 stick unsalted butter melted
  • 1/4 cup milk
  • 2 large eggs
  • 1/4 cup pineapple juice from the canned pineapple chunks

Pineapple Mixture

  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 stick unsalted butter cut into small cubes
  • 1 cup pineapple chunks drained

Instructions

  • Preheat oven to 350 F. Line a 9x5 inch loaf pan with parchment paper. Whisk together all the dry ingredients in a mixing bowl: Flour, baking powder, baking soda, sugar, and salt.
  • Stir in the melted butter, milk, eggs and pineapple juice. Stir everything together until it is smooth. Pour the batter into the prepared loaf pan.
  • Stir all the ingredients for the pineapple mixture in a separate bowl. Sprinkle the mixture on the cake batter in the pan, distributing it evenly. Bake the cake at 350 F for 55-60 minutes, or until a toothpick inserted at the center of the cake comes out clean. Cover the cake loosely with foil after the first 15 minutes of baking to avoid over-browning.
