Pineapple Mixture
1/4cupall-purpose flour
1/4cupbrown sugar
1/4 stickunsalted buttercut into small cubes
1cuppineapple chunksdrained
Instructions
Preheat oven to 350 F. Line a 9x5 inch loaf pan with parchment paper. Whisk together all the dry ingredients in a mixing bowl: Flour, baking powder, baking soda, sugar, and salt.
Stir in the melted butter, milk, eggs and pineapple juice. Stir everything together until it is smooth. Pour the batter into the prepared loaf pan.
Stir all the ingredients for the pineapple mixture in a separate bowl. Sprinkle the mixture on the cake batter in the pan, distributing it evenly. Bake the cake at 350 F for 55-60 minutes, or until a toothpick inserted at the center of the cake comes out clean. Cover the cake loosely with foil after the first 15 minutes of baking to avoid over-browning.
