Baked Egg Casserole

Ingredients

  • 8 eggs
  • 5-6 slices of turkey breast or ham cooked, sliced to small pieces
  • ½ onion chopped
  • 1 medium tomato chopped
  • 3 small potatoes cut into small cubes
  • 1 cup cheddar cheese
  • ½ cup all purpose flour
  • 3 tbsp butter
  • ½ tsp salt
  • ½ tsp dried parsley
  • ¼ tsp ground pepper
  • 1 and 3/4 cups milk

Instructions

  • Heat butter in a medium pan and saute the onion and tomatoes until tender. Set aside.
  • Boil the potatoes in a moderately salted water until tender. Set aside.
  • Preheat oven to 350 F.Grease your baking dish ( about 9 x 13 in size) and sprinkle about ⅓ of the cheese in a single layer. Top with the potatoes, onions and tomatoes. Add the sliced turkey or ham on top.
  • Cover with ⅓ of the cheese.
  • Beat the eggs in a large bowl and season with salt and pepper. In another bowl, combine the milk and flour and whisk until smooth. Add the milk mixture and the parsley to the beaten eggs and pour over the ingredients in the baking dish. Sprinkle remaining cheese over top.
  • Bake at 350 for 50-55 minutes or until the egg is almost set in the middle and the cheese has melted.
