Double Chocolate Muffins

Moist and loaded with chocolate chips, these double chocolate muffins are the perfect fix to your chocolate cravings.

Ingredients

  • 2/3 cup unsalted butter melted
  • 2 large eggs
  • 1 and 1/2 cups whole milk
  • 7 oz semi-sweet chocolate melted
  • 3 and 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 2 cups chocolate chips

Instructions

  • Preheat oven to 350 F and line a muffin pan with cupcake liners. In a large mixing bowl, combine all the wet ingredients: melted butter, eggs, milk and melted chocolate. 
  • Whisk together all the dry ingredients in another bowl and add the mixture to the wet ingredients. Mix everything together lightly just until incorporated. Do not overmix.
  • Fold the chocolate chips. Spoon batter into the muffin liners until they are 3/4 full. Bake at 350 F for 20-25 minutes, or until a toothpick inserted at the center comes out clean with a bit of melted chocolate chips.
