Easy Sesame Noodles

This is a quick and simple Asian noodle dish you can make anytime. Easy Sesame noodles is a tasty and simple noodle made with thick and flat noodles and a simple sesame sauce.

You know how I love making personal lunches. Small portions, easy and the ones that my kids do not necessarily have to share with me. For one maybe because they do not like it, or maybe the dish is enough for 1-2 portions.

However, this Easy Sesame Noodles is one that they can share with me because they like it, and also it is enough to fill us up for a quick lunch. Whenever I make this, my girls will be all ready with their bowls and chopsticks.

Easy Sesame Noodles

  • Almost a no-cook noodle dish (you have to boil the noodles).
  • Easy, fuss-free and perfect for a snack, quick lunch (maybe paired with a protein on the side), or anytime when I do not feel like cooking at all.
  • Two components: Noodles, and Sauce. The noodles need to be boiled in water, and the sauce is made of key flavors like sesame paste, soy sauce, chili crisp oil, garlic powder and brown sugar.

Recipe Tips: Ingredients and Substitutions

  • The Dried Noodles. These can be found in the Asian aisle. Ramen noodles, and rice noodles work here. You are looking for the flat and wide variety. You can also use the No Yolk brand as those are flat and side too and they work well in this recipe.
  • Sesame Paste. This is not to be confused with tahini. Although they are of almost the same composition, sesame paste is richer, and deeper in flavor.
  • Black Vinegar. This is also sometimes called as Chinese vinegar. It is deep in color, slightly sweet and malty. If you cannot find this use red wine vinegar or just omit altogether.
  • Chili Crisp Oil. I love Lao Gan Ma brand, but other Asian chili crisp will work here.

Process and Tips for Success

  1. Mix the Sauce Ingredients. Make a smooth paste in a bowl.
  2. Cook the Noodles. Cook the noodles according to package directions, then drain.
  3. Toss Noodles in Sauce. The noodles should be well coated in sauce. If everything becomes overly sticky, drizzle a splash of chicken broth ( about 1-2 teaspoons) and stir it in. Garnish with green onions and serve right away.

Serving the Sesame Noodles

  • The noodles are best served right away. As it cools, the noodles will clump and stick together. It will be just as good, just the texture will change.
  • If you have leftovers, drizzle a bit of sesame oil and chicken broth ( about 1-2 teaspoons) before warming up the noodles in the microwave.

Ingredients

  • 190 grams wide and flat dried noodles see note 1
  • 3 tbsp cooked sesame paste see note 2
  • 1 tbsp sesame oil
  • 1 tbsp chili crisp oil
  • 1 tsp Chinese black vinegar see note 3
  • 2 tbsp brown sugar
  • ½ tsp garlic powder
  • 2 tbsp chicken broth
  • 2-3 stalk green onions chopped, for garnish

Instructions

  • Make the Sauce. In a large bowl, combine soy sauce, sesame paste, Chinese wine, sesame oil, chili crisp oil, brown sugar and garlic powder. Stir well until smooth.
  • Cook the Noodles. Bring a pot of water enough to cover the noodles to a boil. Add the dried noodles, lower heat and allow to simmer for 2-3 minutes or until tender and separated. Drain.
  • Toss and Serve. Add the noodles to the bowl with the sauce and stir and toss until the noodles are all coated in sauce. If the sauce is too dry, add some chicken broth, 1-2 teaspoons at a time and stir. Serve the noodles immediately.
  • This sesame noodles will be sticky and clumpy as it cools so it is best served right away. If you have leftovers, moisten the noodles with a drizzle of sesame oil and chicken broth, then heat the noodles up in the microwave.

Notes

  1. Wide and Flat Noodles. I used ramen noodles that are wide and flat. You can also use the No Yolk brand noodles as those are similar in shape.
  2. Sesame Paste. This is not the same as tahini. Sesame paste has a deep, bolder flavor and this is what I used in the recipe. It is often labelled as cooked sesame paste.
  3. Chinese Black Vinegar. Found in Asian aisle. It is deep in color, and has a slight sweet flavor. If you cannot find this, you can skip or replace with red wine vinegar.
