Chocolate Chip and Pecan Quick Bread
- What’s is there to love? Okay, my favorite part will be the melty chocolate chips suspended all throughout the cake itself.
- But then, there is also the pecan topping that adds a delicious texture to every slice. There are bits of chocolate chips in there, too!
- You see, there is nothing really rocket science about this cake, but the combination of delicious classic flavors takes it to the next level delicious!
Let’s Make It!
Okay, brace yourself for the work ahead. Combine and whisk all the dry ingredients in a mixing bowl.
Add the liquid ingredients, stir gently with a rubber spatula until half incorporated. Then add chocolate chips.
Next, stir, still gently, just until the ingredients are combined. No need for over mixing, you are looking for a chunky batter.
Pour and scrape the batter into a 9×5 inch loaf pan that is lined with parchment paper. Top the batter with the chocolate chips, then sprinkle the chopped pecans.
Bake at 350 F for 50 minutes, or until a toothpick inserted at the center of the cake comes out clean. That wasn’t so hard, was it?
Some words of caution though. You need to cool the cake completely before slicing it. I mean a crumbled cake is also delicious, but if you want neat slices, allow the cake to cool š

Ingredients
- 2 ¼ cups all-purpose flour (281 grams)

- ½ tsp salt
- ¾ cup sugar (150 grams)
- 1½ cup buttermilk
- 1 egg
- 1/3 cup melted butter (76 grams)

For the Toppings
- ¼ cup semi sweet chocolate chips
- ½ cup chopped pecans
Instructions
- Preheat oven to 350 F. Line a 9x5 inch loaf pan with parchment paper. In a mixing bowl. whisk together flour, baking powder, salt, and sugar.
- Make a well in the center and add buttermilk, beaten egg, melted butter, and vanilla. Use a rubber spatula to gently mix the ingredients, stopping halfway, then adding ½ cup of chocolate chips.
- Continue to gently stir just until the ingredients are combined. Do not overmix. The batter should be a bit chunky and not smooth.
- Pour and scrape the batter into the prepared loaf pan. Sprinkle ¼ cup chocolate chips, then the pecans on top,
- Bake at 350 F for 50 minutes, or until a toothpick tester inserted at the center of the cake comes out clean. Allow the cake to cool completely before slicing.
Notes
- Allow the cake to completely cool before slicing it. The cake will crumble if sliced immediately.
