Strawberry Cheesecake Overnight Oats Recipe
I have been rotating with several overnight oats recipes lately, and this strawberry cheesecake variation is my favorite.
In this recipe, you get a cheesecake feel to your oats because first, greek yogurt is thick and rich. Second, the cream cheese adds richness and tang and third, the graham cracker crumbs round up the cheesecake flavor with its buttery profile.
Some Notes on the Ingredients
- Oats. You can use rolled oats or quick cooking oats or gluten-free oats according to you needs and preference.
- Milk. I use soy milk. But you can also use other non-dairy milk like almond, cashew or oat milk. I recommend unsweetened variety. Of course you can always use cow’s milk.
- Greek Yogurt. I recommend at least 2% fat. This is because we are going after a creamy, and rich flavor. Also, feel free to use vanilla flavored greek yogurt, then reduce (or omit ) the maple syrup.
- Cream Cheese. The cream cheese must be soft and velvety so it mixes beautifully with the yogurt. I microwave it at low power for 5-7 seconds at a time.
- Maple Syrup. The amount in the recipe is a guideline and you can choose to add or reduce this according to your sweetness preference. I suggest to keep it on the minimum side. You can always add more in the topping the next morning! You can also use honey.
- Strawberries. I use frozen. But fresh strawberries are perfect as well.
Let’s Make It
- Combine softened cream cheese and Greek Yogurt.
- To your jar, add the oats and milk. Top with half of the sliced strawberries.
- Add the yogurt/ cream cheese mixture. Sprinkle the ground flax and graham crumbs.
- Arrange the remaining strawberries on top. Drizzle with maple syrup. Cover and let this rest in the fridge overnight (or at least 4 hours).
- The next morning, grab and enjoy!
