A chicken BBQ pizza made of cubed pieces of chicken with a sweet, salty and tangy BBQ sauce on a homemade pizza crust. It is made even special with toppings of onions, mozzarella cheese and cilantro.
Whenever I eat homemade pizza, I always end up asking myself why I haven’t been making pizza as often as I could, given the fact that it is not as complex as one may think, and the outcome is always filling and satisfying?
There is so much to love about a pizza. I mean it might be one of the most popular food items that have ever been gifted to mankind. Imagine bread plus cheese, with the tasty sauce, meat, and tender-crisp vegetables.
What is not to love? Now if it is homemade, there is always extra points for the rewarding feeling that you get when your make own pizza.
And it was exactly how I felt when I made Chicken BBQ Pizza- satisfied, delighted and fulfilled. The reward does come in one great package.
But don’t get me wrong. I am no pizza connoisseur. All I know is that there is this pizza crust recipe that I hold on to and that it tastes good and it is not complicated to pull together.
This chicken BBQ pizza is such a delight to me. The BBQ sauce gives the pizza a sweet and salty kick with a little bit of tang, and the chicken pieces are just enough for me to regard this pizza as meaty.
For the vegetable part, I used sweet onions. I love their flavor more than the red ones, but you can use whichever one you prefer. A classic pizza element, the mozzarella cheese needs no explanation to prove its worth and finally, I would not call this Chicken BBQ pizza complete without the cilantro.
The pizza crust is the only recipe that I have used in my entire existence. I have no problems with it and it works really well for me. It is a keeper.
The single batch is enough to make 2 pizzas, so each time I make one, I feel giddy because there is one more portion of pizza dough left that I can use in the future.
Some Uses for Leftover Pizza Dough
- Use leftover spaghetti sauce as pizza topping together with shredded cheese.
- Make an all cheese pizza to get rid of any cheeses left sitting around in the fridge.
- Use a ready-made pizza sauce plus any leftover roasted meat for pizza toppings.
Actually, you can do an endless combination of toppings as you wish, and there will be no judgment. It is your pizza after all.
Make the Pizza Crust
- To make this crust, heat up 1 and 1/2 cup of water in the microwave for 30-40 seconds or so, until it reaches 110 F. Sprinkle one teaspoon of active dry yeast over the water and let it sit for 5 minutes.
- In a bowl of a stand mixer fitted with the paddle attachment, Add the flour and salt and stir on low speed just to combine them.
- With the mixer still running on low, drizzle in the olive oil and keep mixing for a few minutes until the mixture is crumbly. Add the yeast mixture and stir until the dough comes together in a sticky mass at the center of the bowl.
- Gather the dough into a ball, then place it in a bowl that is lightly greased with olive oil. Cover the bowl with plastic and let it sit in the fridge for up to 3 days.
If you want to use it immediately, let it sit on the counter for 2 hours. Otherwise, store it in the fridge for up to three days, or until you are ready to make your pizza. Freeze if you don’t plan on using it within three days.
And again, the recipe makes enough dough for two pizzas. You can freeze the dough, wrapped well in plastic, then in foil, for up to a month.
Assemble and Bake the Pizza
To assemble pizza, lightly grease the surface of a large rectangular pan with olive oil. Preheat oven to 500F.
Toss pizza dough in the air with your hands, use its natural weight to let it stretch to a rough rectangle with about 1/4 inch thickness.
Lightly rub olive oil on the crust, then sprinkle salt and pepper. Spread extra BBQ sauce on top, and spread evenly.
Then sprinkle the cheese, reserving some for finishing. Add the onions, chicken and more cheese.
Your pizza is about to come together.
Bake pizza for 15 minutes or so, until the cheese has melted and the crust is lightly golden. Sprinkle the chopped cilantro over the top.
And behold, fresh and hot, totally satisfying Chicken BBQ pizza.
Now relax, grab a slice, eat. Repeat.
Chicken BBQ Pizza
FOR THE PIZZA CRUST
- 1 and 1/2 cup water
- 1 tsp. active dry yeast
- 4 cups all-purpose flour
- 1 tsp. salt
- 1/3 cup olive oil
FOR THE CHICKEN BBQ TOPPINGS
- 2 pieces boneless and skinless chicken breast
- 1/2 cup BBQ sauce
- salt and pepper
- 1/2 cup sweet or red onions sliced thinly
- 1/2 to 1 cup shredded mozzarella cheese
- 1 small bunch fresh cilantro chopped
MAKE THE PIZZA CRUST
Heat the water in the microwave for 30 seconds at a time until it reaches 110 F. Sprinkle the yeast over the water and let the mixture stand for about 5 minutes.
In a bowl of a stand mixer fitted with the paddle attachment, add the flour and salt and mix for a few seconds using low speed. While the mixer is still running, drizzle the olive oil and keep mixing for a few minutes until the mixture looks crumbly. Add in the yeast mixture and continue to stir until the mixture comes together as a sticky, shaggy dough in the center of bowl.
Gather the dough into a ball and place it on a bowl that is lightly greased with olive oil. Cover with plastic wrap and let sit in the fridge for 2 to 3 days before using. ( if you want to use it immediately, let it sit in the counter at room temperature for 2 hours.) Letting it sit longer in the fridge is recommended to allow the crust to develop its flavor better.
FOR THE CHICKEN BBQ TOPPINGS AND ASSEMBLING THE PIZZA
Preheat oven to 375 F. Season chicken breasts with salt and pepper, place in a baking dish and pour BBQ sauce on top. Spread the sauce so the chicken are coated evenly. Bake in preheated oven for 18-20 minutes, let cool slightly and dice the chicken to small cubes.
Preheat oven to 500 F. Pour a little amount olive oil on a large rectangular baking pan and smear to coat the surface. Now take the dough and divide it in half as the dough recipe is enough to make 2 pizzas. I freeze the other half for later use. Toss the dough around with your hands, let the weight of the dough allow it to stretch itself until you form a rough rectangular shape of about 1/4 inch thickness.
Pour and spread a little amount of olive oil over the crust, then sprinkle some salt and pepper. Sprinkle the shredded mozzarella cheese, then add the chicken pieces and the onions. Sprinkle more mozzarella cheese to finish, if desired. Bake in the oven for about 15 minutes or until the cheese has melted and the crust is lightly golden. Top pizza with the fresh, chopped cilantro.
