Chicken BBQ Pizza

A chicken BBQ pizza made of cubed pieces of chicken with a sweet, salty and tangy BBQ sauce on a homemade pizza crust. It is made even special with toppings of onions, mozzarella cheese and cilantro.

Whenever I eat homemade pizza, I always end up asking myself why I haven’t been making pizza as often as I could, given the fact that it is not as complex as one may think, and the outcome is always filling and satisfying?

There is so much to love about a pizza. I mean it might be one of the most popular food items that have ever been gifted to mankind. Imagine bread plus cheese, with the tasty sauce,  meat, and tender-crisp vegetables. What is not to love? Now if it is homemade, there are always extra points for the rewarding feeling that you get when you make your own pizza.

And it was exactly how I felt when I made Chicken BBQ Pizza- satisfied, delighted and fulfilled. Pizza day is a happy day!

Homemade Chicken BBQ Pizza

 

  • This chicken BBQ pizza is such a delight to me. The BBQ sauce gives the pizza a sweet and salty kick with a little bit of tang, and the chicken pieces are just enough for me to regard this pizza as meaty.
  • For the vegetable part, I used sweet onions. I love their flavor more than the red ones, but you can use whichever one you prefer. A classic pizza element, the mozzarella cheese needs no explanation to prove its worth and finally, I would not call this Chicken BBQ pizza complete without the cilantro.

Make the Pizza Dough

To make the pizza dough, combine warm water and the yeast in the bowl of a stand mixer. Stir well. Let this sit for about 5-7 minutes, or until it looks frothy. Stir in the salt and olive oil. Add 2 ¼ cups all-purpose flour gradually to the bowl, stirring with a wooden spoon until a shaggy dough is formed.

Attach the dough hook to the stand mixer, and knead the dough in the mixer for 3 minutes while gradually adding the remaining 1/4 cup of flour to the bowl. The dough should be cleaning the sides of the bowl. Transfer the dough into a lightly greased bowl. Turn to coat and cover for about 1 hour, or until doubled in bulk.

Meanwhile, cook the Chicken.

Preheat the oven to 350 F. Season the chicken breast with salt and pepper. Combine the chicken and the bbq sauce in a shallow baking dish. Bake at 350 F for 22-28 minutes, or until the chicken is fully cooked. Chicken should register 160 F in the thermometer. Allow the chicken to cool slightly, then shred with two forks. Stir the chicken back into the bbq sauce in the dish.

Assemble and Bake the Pizza

After the dough has risen, grease a 10×15 inch dark non-stick pan with a little bit of olive oil. Preheat your oven to 450 F. Take the dough, and using its own weight, allow it to form a rough rectangle as you lift it. Lower it on the baking pan and pat and press it to occupy the space of the pan.

Drizzle and spread 1 tbsp of olive oil over the dough. Spread more bbq sauce on top. Sprinkle 1 cup of mozzarella and top with the chicken pieces and sliced onions. Lastly, sprinkle the remaining mozzarella cheese on top of everything.

Bake the pizza for 20-22 minutes, or until the edges of the crust are golden and the cheese has melted. Top the cooked pizza with cilantro. Serve immediately.

  • 1 cup warm water
  • 2 and 1/4 tsp active dry yeast
  • 1/2 tsp salt
  • 3 tbsp. olive oil
  • 2 and 1/2 cups all-purpose flour

For the Chicken BBQ

  • 2 pieces chicken breasts, boneless and skinless
  • 1 cup bbq sauce
  • salt and pepper

For the Extra Toppings

  • 1 medium onion, sliced into thin rounds
  • 2 cups shredded mozzarella
  • about 3 tbsp BBQ sauce
  • about 1 tbsp olive oil
  • cilantro for garnish

Notes

You can make the chicken ahead and just store it in the fridge until you are ready to cook the pizza ( within a reasonable time).
