Hello and a happy brand new year to you all! The first post of the year is a pizza! This is one of the indulgent things we had during the kids’ winter break.
And oh what a grand time it was! I really love having my kids home all day when we can sleep late, enjoy movies and eat treats for days. This Cajun Chicken and Corn Pizza is a close sibling of my Bacon Mushroom White Pizza, and was totally enjoyed ( except for the youngest 2 members).
Cajun Chicken and Corn White Pizza
I knew I wanted a white sauced pizza and was thinking of new flavor combinations to put on top of it. This Italian Sausage White Pizza from my other blog was a total hit, so I thought of making a new version.
So immediately I fancies the bold flavors of Cajun, pairing it with the mild sweetness of the corn, we have a delicious combination.
Process, Tips and Pointers
The Pizza Dough
- This is my easy and simple pizza dough recipe. Few ingredients and always turns out amazing. Pillowy soft and slightly chewy, its texture is perfect.
- The recipe makes enough for two 9 to 12ish inch pizzas. For this recipe, you can freeze the other half for future use.
The Cajun Chicken
Using a sharp knife slice the chicken breast in half along its thickness to make 2 fillets. Generously coat the chicken in the Cajun spice mix and pan fry until nicely golden.
Let this cool slightly, then cut into little cubes.
The White Sauce
- The white sauce is made of butter, flour, milk and parmesan cheese. It starts out by making a roux as a thickener.
- The milk is added to the butter-flour mixture. Whisk this continuously until the liquid is ever so slightly thickened.
- Turn off the heat, then add the parmesan. Stir this until smooth.
Assembly of the Pizza
The layering goes like white sauce, chicken, mozzarella and corn. But we do this in two addition so basically, you will pile on half of everything, followed by the remaining half of everything.
Also note that in the second layer, you add the white sauce in dollops because it will be hard to spread it once there is stuff in the pizza already.

Ingredients
For the Pizza Dough
- 1 cup warm water
- 2 ¼ tsp active dry yeast
- 1/2 tsp salt
- 3 tbsp olive oil
- 2 ½ cups all-purpose flour
For the Cajun Chicken
- 1 chicken breast, boneless and skinless
- 1 tsp paprika
- ½ tsp oregano
- ½ tsp salt
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp cayenne powder ( or more if you prefer spicy)
- 1 tsp brown sugar
- 2-3 tbsp olive oil
- 1 cup shredded mozzarella cheese
- ½ cup canned corn kernels, drained well
White Pizza Sauce
- 3 tbsp butter (43 grams)
- 3 tbsp all-purpose flour
- 1 cups milk
- 1/3 cup shredded parmesan cheese
Instructions
- Make the pizza dough. Combine yeast and water in a bowl of a stand mixer. Let this sit until it becomes foamy, about 5-7 minutes. Stir in the salt and olive oil. Gradually add 2 ¼ cups of all-purpose flour to the bowl, stirring after each addition, until a soft dough is formed.
- Attach the dough hook to the mixer, and knead the dough for 3 minutes, or until it comes together in the center and cleans the sides of the bowl as the mixer runs. Gradually add 1/4 cup of flour to the bowl, and knead for another minute or so, until the dough releases completely from the bottom of the bowl.
- Transfer the dough into a lightly greased bowl, turning it over to coat. Cover this loosely with a clean kitchen towel and allow it to rise for 1 ½ hour, or until doubled in bulk.
- Meanwhile, cook the Cajun Chicken. Slice the chicken in half along the center to make 2 thinner fillets. In a bowl, combine paprika, onion powder, garlic powder, salt, oregano, brown sugar and cayenne. Whisk well to combine. Toss the chicken into the mixture, coating well.
- In a medium skillet, heat olive oil over medium heat, Cook the chicken, for about 3-5 minutes on each side, or until golden and cooked through. Transfer the cajun chicken to a plate. Let cool then cut into little cubes.
- To make the white pizza sauce, melt butter in a saucepan. Add the flour and using a whisk, stir in the flour and cook until the paste-like mixture is lightly browned. Pour in the milk, and whisk continuously until the mixture thickens. Turn off the heat and stir in the parmesan cheese.
- Assemble the pizza. Preheat the oven to 450 F. Lightly grease a 12-inch pizza pan with olive oil. Once the dough has risen, gently deflate it and divide it into 2 equal portions ( This recipe makes two 12-ish inch pizzas. You can freeze the other half for future use). Toss and shape the dough until it widens into a rough circle. Place it into a 12-inch round pizza pan, stretching and patting until it takes the shape of the pan.
- Spread half of the pizza sauce all over the dough. Sprinkle half the cubed chicken on top, followed by half of the corn. Sprinkle half of the mozzarella. Spoon the remaining pizza sauce in dollops all over the pizza once again. Top with the remaining chicken, corn and mozzarella.
Bake the pizza at 425 F for 18 minutes, or until the edges of the dough is lightly golden. Allow the cooked pizza to rest for a few minutes. Slice and enjoy!
Notes
to freeze the other half of the pizza dough, wrap it in plastic film, then in foil. Freeze for up to a month.
To use, thaw at room temperature until soft
