Okay, I thought I will do Thursday Thoughts every last Thursday of the month because I haven’t been keeping at it weekly ( I am so bad at it!) So fingers crossed, here I am beginning again!
Camping Season Has Begun
Once the camping site registration opens, my husband books all our camping for the entire spring and summer season. It is our favorite time to just be still and calm, be with nature and be with each other.
Plus the kids’ ages are perfect for this kind of activity. They enjoy being messy, exploring the outdoors after a long season of winter. I and my husband wonder if they will still come with us once the teen stage begins. ( I hope they will!)

A reader once asked me if I have a video for Spanish bread and luckily, I was on the process of editing it at the time. And here it is now! I am loving Spanish Bread and it is my top post on the blog for months now.

I Have Never Had Falafel Until this Week.
I may not be alone on this one, Am I? Every time somebody gushed about how they loved their falafel lunch, I am always ” What in the world is a falafel?” Until I saw Kitchen Confidante’s recipe and I thought to myself, this is enough. I have to make myself this falafel and eat it too.
Did I like it? I adored it! I am making another batch today so I can have it for the weekend. And, I will still be trying the falafels, the deep fried ones, in the near future.
On Regrets and Realizations
An old friend of mine passed away this month. We have not talked for years. My most memorable memory with her was when we dined in this simple eatery with little huts for their dining area. It was a lovely night, and she was such a special person.
My regret was that I let years passed by without a quick hello, or heck even a quick facebook wave just to somehow bridge the long time and distance that separated us.
I realized that while I really hate being active on Facebook or any other social media in terms of liking, interacting and even posting photos of myself ( and happenings in my life), it is a good tool to stay in touch in a very easy way, to someone who is so far away but means a lot to me.
I don’t have to chat with everybody every day, but a quick how are you, each time something reminds me of somebody may be a good way to re-kindle, re-connect, even if it is just from time to time.
