I cooked this pasta a few months ago.
If you are wondering why it is not on the blog, well,because I am not sure what I put in it and how much. It is one of my experimental dishes where I randomly throw in the pan what I think would make the dish taste good.
It is like, a pinch of this, a pinch of that, a handful of these and a spoonful of that. Oh wait, probably one more spoon of that.You see, sometimes I crave for something and I make up a recipe in my mind and just dance my way into the kitchen and start experimenting.
Well, the dish turned out good, which RARELY happens. But I didn’t want to post a recipe made of approximations because I am trying to be a responsible food blogger. My recipes need to be accurate and reliable because I am assuming and hoping that there are people who read my blog and try my recipes. So next time, I will make sure to list what I put so I can test the recipe again. Lesson learned.
On the other hand, I remember the old school cooking in the Philippines where people in our province actually cook by approximation. You know, cooking by taste. I grew up seeing my auntys and uncles cooking out of huge pots over smoking charcoal without any piece of paper or memorized recipes at hand. They know the basic ingredients and method of doing a dish and the amount were just approximations as they go along. And the food turns out great, everytime. They were not even cooking for a small household like mine. They feed a party of 50 , 60 or even 100. Ha! Such a pure talent!
As for me, I go online, print recipes, cook and serve.

I crave, I imagine , I experiment , (I fail and I dump food in the garbage) and serve.
I wish I will reach a point in my life when I can cook like my auntys and uncles did. But thinking of it, I really did not want to be like a master chef in cooking. I just want to better at it because I still have LOTS to learn.
So those are a glimpse of my life in photos ( and a little words). I kinda had fun narrating short stories to you because it made me reminisce my past life as well.

oh sanna, splurge on yourself from time to time. you deserve a reward 🙂 is the ube ice cream from the philippines? i guess, cooking in approximations will be more achievable when we age. try to put some butter on the noodles next time before you mix the pasta sauce; the taste will be more flavorful 🙂
